How to make no-bake chocolate brookie

Step 1. Mix the brownie layer ingredients and press into a small lined container.

Step 2. For the cookie layer, mix the kwark and coconut flour until smooth, then gently spread it over the brownie base.

Step 3. Mix the protein powder and cocoa, then add the water gradually until smooth, thick and creamy. Spread it over the cookie layer.

Step 4. Freeze until firm if you want it quickly, or leave it in the fridge for a few hours. Cut into six pieces.

The science behind

the science behind

Kwark is strained, so it's dense in protein and low in water, firm enough to hold a layer on its own. Coconut flour is mostly fibre and absorbs a lot of liquid for its weight, so just 10 to 30 g turns soft kwark into something closer to a dough. A short chill firms all three layers so they slice cleanly.

Tips for the best no-bake chocolate brookie

My tip. Add the water to the fudge layer gradually. It goes from too thick to too thin quickly.

Storage

Keeps in the fridge for 3 to 4 days.
