The flapjack that saves my weekday breakfasts
I like starting work early, but I don't want my mornings to feel like a race. This flapjack is health on a plate for me: oats, banana, chia, psyllium, peanut butter, eggs and nuts, all baked into one slice.
You don't have to follow it precisely. I make it slightly differently almost every time, and serve it with yogurt, honey and hemp seeds.

How to make the flapjack that saves my weekday breakfasts
Step 1. Mash the banana, then mix in the eggs, oats, chia, psyllium, peanut butter, vanilla and sweetener.
Step 2. Add 300 ml of milk and more if needed. Everything should be well combined and moist, but not swimming in milk.
Step 3. Stir in the nuts and any extras and spread into a lined baking tray.
Step 4. Bake until golden and set.
Step 5. Let it cool, slice, and serve with yogurt, honey and hemp seeds.
The science behind
Chia seeds and psyllium husk are full of soluble fibre. In liquid they form a gel, and psyllium can soak up roughly ten times its own weight. That gel binds the oats together with very little fat or sugar, and it holds on to moisture, which is why the slices don't dry out over the week.
It's also why the milk amount varies: different oats and psyllium absorb differently, so go by consistency rather than the exact number.
