10-minute cottage cheese tortilla bake
This started with me looking into the fridge, trying to figure out what to do with a few leftover tortillas. I tore them up, mixed them with cottage cheese, eggs and milk, threw in some cheese that also needed using, added plenty of dill and hoped for the best.
It turned into a soft, cheesy, golden bake that takes about 10 minutes of actual work. It works as a snack or alongside a meal, and it rescued a few things from the fridge.

The science behind
This is really a savoury bread pudding. Eggs, milk and cottage cheese make a custard, the torn flatbread soaks it up, and the egg proteins set in the oven into something soft but sliceable. The golden top is Maillard browning from the cheese and eggs, which is where most of the flavour comes from.
